Fresh and fruity salsa perfect for summer BBQ evenings
I really think fruit is a gift from nature: it's wonderfully sweet, fresh, healthy and you can make particularly tasty things with it. Tropical fruit is a real treat for me: passion fruit, for example, tops my list of favourite fruits. When we have a BBQ I like to make a salsa myself alongside the sauces. A tomato salsa is of course nice, but we probably all know that already. Did you know fruit is also perfect for making salsa? Mango salsa is made quite often, but I wanted to do it a little differently and also used pineapple. When you combine it with fresh herbs you get something insanely delicious! Try this salsa with pork or chicken: a summery party on your plate guaranteed =D
1. Clean the mango and the pineapple. I find it handy to do this with little gadgets, like a mango slicer and that tool you use to core a pineapple (what is that actually called?). Cut the fruit into nice small cubes of about 1/2 centimeter.
2. Remove the seeds from the chili and chop it very finely. Wash the fresh herbs and chop them finely as well. Put all the ingredients together in a bowl, stir well and taste to see how much salt & pepper you want to add. It's best to make this first: the longer it sits, the more the flavours meld together and that only makes it better.

This salsa is delicious with grilled meat, fish or as a fresh topping on a vegetarian burger. Feel free to make it about half an hour ahead so all the flavours have time to come together.
Did you use a ripe mango? Then the salsa will be naturally sweet enough. Add the red chili to taste if you prefer a milder version. Lovely with an extra squeeze of lime juice for some extra freshness.
