Crispy bread with smoky tomatoes and savory sardines from the BBQ
Bruschetta can be made incredibly simple: toast a slice of bread, pile on some chopped tomato in olive oil, and add a bit of basil for colour. Absolutely delicious — but when you put in just a little more effort, the result is so much more rewarding. You can of course make this on the BBQ (in the garden or at the park), but if the weather isn't playing along, a griddle pan works just as well. Enjoy!
1. Place the cherry tomatoes (in batches) on the BBQ and grill them until they char and soften.
2. Place the unpeeled garlic cloves and the red chilli on the grill as well. Slice the lemon and lay 2–3 slices on the grill.
3. Remove the tomatoes from the grill, break them apart and place them in a wide bowl. Peel the charred, softened garlic and chop it finely.
4. Finely chop the grilled lemon slices. Add the sardines. Chop the parsley very finely. Combine the tomato, garlic, lemon, sardines, chilli and parsley, and roughly crush everything together.
5. Season with olive oil and salt. Grill the bread. Spoon the sardine mixture over the bruschetta.

Serve the bruschetta immediately after grilling the bread so it stays nice and crispy. You can prepare the sardine mixture a few minutes ahead of time to let the flavours meld together.
No BBQ to hand? You can easily grill the tomatoes, garlic and lemon in a griddle pan on the hob. The result is just as flavourful and delicious.
