Nothing better (or more fun) than little bites on the table at a birthday or party. Cucumber slices, cherry tomatoes, peppers… Delicious of course, but a savory bite is a nice change sometimes. After seeing pizza puff pastry bites at a party — sadly not gluten-free — I decided to try making them myself. This gluten-free version is easy to prepare and tastes wonderfully like pizza. They’re guaranteed to be a hit with your guests.

You can also prepare them in advance and keep them in the fridge to bake in the evening! A fun twist on all the usual party snacks!

Ingredients

  • 4 sheets of gluten-free puff pastry
  • 8 mini mozzarella balls
  • 4 slices prosciutto, cut in half
  • two teaspoons pesto (click here to make your own pesto)
  • two teaspoons passata di pomodoro
  • dried basil
  • 1 egg yolk

Puff pastry pizza bites

    1. Preheat the oven to 220°C
    2. Cut the puff pastry into rectangles about twice as long as they are wide. For 8 bites, cut 8 rectangles.
    3. Mix the passata with the pesto and spread it thinly over the puff pastry.
    4. Place half a slice of prosciutto on the pesto mixture, on the bottom half of the pastry. Cut the mozzarella ball in half and place it on top of the prosciutto.
    5. Fold the top half of the puff pastry over the bottom and press the edges together. Prick the pastry a few times with a fork.
    6. Beat the egg yolk in a mixing bowl and brush the pastry with it. Then sprinkle the bites with some basil. Bake in the oven for 15 minutes until golden brown (at 220°C).

These puff pastry pizza bites are perfect as a snack or party appetizer. They’re gluten-free and quick to make—ideal when you have guests or just want to enjoy a tasty bite. Serve them warm from the oven for the best result.

Want to vary them? Swap the prosciutto for salami or use a different cheese of your choice. You can also adjust the pesto to your taste, for example using red pesto instead of green. That way you’ll create a surprising bite each time.
