Ingredients

  • 4 large chicken drumsticks
  • 1 Chinese cabbage
  • 2 carrots
  • 1 mango
  • 2 handfuls of raisins
  • 15 cherry tomatoes
  • 3 spring onions
  • 1 orange
  • 1 lemon
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 8 tbsp olive oil
  • 3 tbsp chili sauce
  • 3 cm fresh ginger
  • sea salt

Chili chicken drumsticks with Chinese cabbage salad

    1. Preheat the oven to 200°C.
    2. Make the marinade for the chicken: mix the chili sauce with 6 tbsp olive oil and 2 cm grated ginger.
    3. Rub the chicken with salt and pepper and then put it into the marinade; you can do this directly in the oven dish. If possible, marinate the chicken in the morning so the flavors sink in. No time? Half an hour will still give great flavor!
    4. Put the chicken in the oven for 40 minutes and then prepare the salad.
    5. Chop the Chinese cabbage, spring onion and carrot — it's quick in a food processor with the coarse blade, but of course you can also chop them by hand.
    6. Halve the cherry tomatoes and cut the mango into cubes.
    7. Make the dressing: mix 2 tbsp olive oil with the juice of 1 lemon and 1 orange. Add 1 cm grated ginger, the sesame oil and the honey.
    8. Put the chopped vegetables in a bowl and top with the mango, tomatoes and raisins. Drizzle the dressing over everything and serve with the chicken drumsticks. Enjoy!
