Almost every Dutch person is an apple pie fan and I’m such a true Dutchie. I’m not saying I never eat unhealthily, because a huge slice of apple pie with thick, rich whipped cream goes down easily for me. Now that I finally have a top recipe for gluten-free apple pie, of course I’m happy to share it with you!

How to make an oven-delicious, gluten-free apple pie?
Preheat the oven to 200°C
Put the buckwheat flour, almond flour and salt in a bowl and mix together.
In another bowl, mix the honey with the coconut oil and the applesauce well.
Now add the wet ingredients to the flour and mix until you have a nice ball of dough. Put the dough back in the bowl and cover it so it doesn’t dry out.
Peel the apples now and cut them into slices. Use a paring knife. Put the slices in a bowl and mix in the raisins, cinnamon and the 4 tablespoons of almond flour.
Grease a springform pan of 25 cm diameter well with coconut oil. Roll the dough out into a large flat sheet. I do this between 2 sheets of parchment paper. If the sheet is larger than the springform (including the edges), remove the top sheet of parchment paper and place the pan upside down in the center of the dough.
Slide your hand under the sheet of parchment and carefully flip the whole thing over. Press the dough into the pan so it fits well. Trim the edges.
Put the apple filling into the pie tin. Roll the remaining dough out again into a long sheet. Cut this into strips and arrange them over the top of the pie.
Beat the egg (or just the yolk) and brush it over the lattice and the sides. The pie can now go in the oven.
Turn the oven down to 190°C and bake the gluten-free apple pie for 30 minutes until golden brown.
Serve the apple pie slices with a cake server on cake plates. Don’t forget to include stainless steel or gold dessert forks. Delicious with a cup of coffee or a cappuccino.

After a very long search, many experiments and some terrible failures, I finally managed to put together a good and delicious apple pie. We’ll skip the heavy whipped cream for now — you really don’t need it because the apple pie has more than enough flavor. Sometimes you have to make choices, and I sometimes struggle with that when it comes to food. In this case you can also use coconut whipped cream. Put a can of full-fat coconut milk upside down in the fridge. The next morning, turn the can over, scoop off the thick cream from the top and whip it. Hello healthy whipped cream!
