Homemade herb butter with garlic, lemon and fresh herbs
I love making herb butter myself. It's so quick, not difficult and better than ready-made: you know exactly what you're putting into it, and it's only fresh ingredients.
1. Remove the butter from its packaging and melt it slowly over low heat in a small saucepan. The butter should not become fully liquid, just soften a little so you can stir it.
2. Put the softened butter into the mixing bowl and press the garlic cloves over it. Finely chop the fresh herbs and stir them into the butter. The amounts are to taste; I would use about 2 to 3 tablespoons of each. Squeeze the lemon and stir the juice into the butter as well — better to use a little less than too much. Finally, season the butter with plenty of pepper and salt.
3. Now you can place the butter on the plastic wrap (for example divided into 4 portions), roll it into logs and freeze them easily. That way you'll always have your own fresh herb butter within reach. Just thaw and spread!
