Gluten-free banana bread with a touch of honey and crunchy walnuts
It's not really bread, but it's not exactly cake either. I can't precisely tell you what it is, but it's absolutely delicious! I'm talking about the phenomenon called 'banana bread' — you've probably seen it before (maybe on another blog?). You bake it in a loaf pan, but it doesn't have the light texture of a cake. Banana bread is great for breakfast (with a spoonful of Chia-Fruit on top, yum!) or as a healthy snack.
1. Preheat the oven to 180°C and grease the loaf pan.
2. Mash the bananas in a mixing bowl until there are no lumps left and stir in the eggs. Stir in the melted coconut oil, vanilla and honey. Now add the coconut flour, baking powder and a pinch of salt and mix everything together. Add a generous splash of rice milk to make the mixture a bit moister. Finally, stir in the roughly crushed walnuts and pour the batter into the loaf pan. It's a fairly thick batter, so spread it evenly.
3. Bake for 20–25 minutes. Check with a skewer to see if the banana bread is done: when the skewer comes out clean, it's ready. Enjoy!
