No — a different lifestyle! One that’s easy to maintain, partly because with a little creativity you can still enjoy the most delicious things. Today I’m treating you to sugar- and gluten-free apple muffins.

Preheat the oven to 175°C
Peel the apples and cut them into very small cubes.
Put the pitted Medjool dates and the banana into a food processor and blend into a puree.
Put the almond flour, coconut flour, cinnamon, baking powder, baking soda and salt into a mixing bowl. Add the banana puree, the two eggs and the vanilla extract. Turn the food processor on.
After about 1 minute, add the diced apples and let it mix for a few more minutes.
Prepare about 10–12 muffin liners in a (muffin) baking tray. Turn off the food processor and fill the muffin liners with the batter until it’s used up.
Place in the oven and bake for about 20 minutes until nicely golden brown.
Also ideal to take with you wrapped in plastic wrap or to serve on small dessert plates.
