Apple crumble

I find apple crumble a lovely way to end the evening. The rich, warming flavours of apple combined with cinnamon have a homely feel. Besides being perfect comfort food for a cold autumn or winter day, it also makes a beautiful Christmas dessert. This gluten-free apple crumble is easy and quick to make, and it’s a nice sugar-free option for a festive Christmas meal.

Equipment

  • Oven
  • Cutting board
  • Knife
  • Mixing bowl
  • Baking dishes

Ingredients

  • 200 g oat flour (or another gluten-free flour, e.g. almond flour)
  • 100 g coconut oil (melted)
  • 4 sweet apples
  • 30 g raisins
  • 2 teaspoons cinnamon
  • juice of half a lemon
  • 1 teaspoon ground ginger
  • pinch of salt

Apple crumble

    1. Preheat the oven to 175°C
    2. Peel the apples and cut them into small cubes. Add the raisins, lemon juice, cinnamon and ginger, and toss together.
    3. Make a dough from the oat flour, coconut oil and salt.
    4. Divide the apple mixture between 4 smaller ovenproof dishes or a small springform pan. Crumble the dough over the top. If you like, brush the dough with a little egg yolk.
    5. Bake for about 25-35 minutes until the dough is cooked. Enjoy!

This apple crumble is gluten-free and made with coconut oil, making it a lighter version of the classic recipe. The combination of cinnamon and ginger gives the crumble a wonderfully warm and spicy aroma. Serve warm, optionally with a scoop of vanilla ice cream or a spoonful of coconut yoghurt.

You can replace the apples with pears or use a combination of both. Optionally add some chopped walnuts to the dough for extra crunch. The crumble is also great to prepare ahead: make the mixture in advance and keep it chilled until you pop it in the oven.
