The pasta was often made by the poorer population in earlier times. The name originally comes from the coal burners who ate this dish during their break. Coal burners are called Carbonaro in Italian.

Cook the spaghetti in a large pot of plenty of boiling (salted) water until it's al dente.
Heat olive oil in a pan and fry the guanciale until crispy. Beat the eggs and mix them with grated Parmesan.
Your dish is basically ready! Just add the spaghetti and the egg-and-cheese mixture to the guanciale and stir everything together well. Make sure the pan is off the heat, otherwise the egg may start to set and you'll end up with scrambled eggs in your pasta.
Serve immediately and eat while it's still warm — that's when it's best!
