Healthy candy bars made from dates, oats and cacao
Have you ever stood in the kitchen, thrown a bunch of things into the food processor, shaped them into little figures and discovered you’d invented an a-maz-ing recipe? I hadn’t either… until today!
These chocokoko’s (as I’ve named them) are honestly to die for. They’re sweet, tropical, have a lovely bite and you can snack on them without guilt. They’re actually super healthy! Read on to see what you need and how to make them. And hey, leave the sugar in the cupboard. It’s not in these =)
1. Pit the dates and put them in the food processor together with the oats and cacao nibs. Hold the machine steady — it can shake quite a bit because of the heavy, sticky dates (my cats always jump at the sound when I switch the food processor on).
2. Meanwhile, melt the coconut oil in a small saucepan and add a little to the date mixture. Check the texture: is it sticky enough to knead but not too wet? If so, it’s good. If not, add a bit more coconut oil. If it’s too wet, add more oats.
3. If all goes well you can now shape the mixture. I made rectangular bars, but you can roll balls or make something else fun. Roll them briefly in the shredded coconut (spread out on a small plate) and chill them in the fridge for at least half an hour. If you really can’t resist, you can taste one before they go in the fridge, but you’ll probably eat them all in one go 😉

These chocokoko's are perfect as a healthy snack or a sweet finish to a meal. Store them in a sealed container in the fridge — they’ll keep for at least a week.
Want to mix it up? Add a pinch of cinnamon or a spoonful of peanut butter to the mix for a different flavor. They’re also delicious with some chopped nuts stirred in.
