For example, the amount of chia seeds in this recipe contains no less than 11 grams of fiber per person, which is 1/3 of the recommended daily intake! These little seeds also provide plenty of protein, omega-3 fatty acids, magnesium and calcium. Did you know, for instance, that they contain 8 times more omega-3 than salmon? And 6 times more calcium than milk? Not bad, right?! And you can also turn them into this chia pudding with coconut and red berries as a healthy dessert!

Chia pudding with coconut and red berries

The chia pudding with coconut and red berries is a light, nutritious breakfast rich in protein and omega-3 fatty acids. The blend of coconut milk, Greek yogurt, chia seeds and red fruit is mixed into a smooth pudding and needs to set in the refrigerator for a few hours. Before serving it's finished with fruit puree and coconut or chocolate shavings for a fresh, sugar-free start to the day.

Ingredients

  • 200 ml coconut milk
  • 200 g Greek yogurt (for a vegan option: omit the yogurt and use 400 ml coconut milk)
  • 6 tablespoons chia seeds
  • 250 g red berries of your choice (frozen in winter)
  • Coconut flakes and/or chocolate shavings for garnish
  • Optional sweetener of choice if you have a sweet tooth (rice syrup, honey, maple syrup, agave…)

    1. Put the coconut milk, the yogurt, the chia seeds and half of the fruit into the blender. Blend until it becomes a smooth mixture. Tip: taste a small spoonful of the mixture to see if it's sweet enough. If not, add a sweetener of your choice. If you're using a immersion blender : let the fruit thaw for 15 minutes, then puree it together with the coconut milk and chia seeds.
    2. Divide the chia pudding between 2 long drink glasses. Place the glasses in the fridge and let them set until the next morning. If you're preparing it as a dessert rather than breakfast: the pudding will have set after 3-4 hours.
    3. Then the next morning just a few small steps before you can enjoy: puree the other half of the fruit. Spoon the fruit puree over the chia pudding.
    4. Decorate the pudding with some coconut flakes and/or chocolate shavings.

This chia pudding is a wonderfully healthy breakfast or dessert that you can easily prepare in advance. Make it the night before and enjoy a nutritious and creamy pudding the next morning without the fuss.

Feel free to vary the red fruit to your favorites, such as raspberries, strawberries or cherries. Fresh in summer, frozen in winter. Add some coconut flakes or chocolate shavings for a festive finish.
