Glutenvrije brownies van rijstmeel

Rice flour isn't the easiest flour to bake with. At least, that's my opinion, since my rice flour cake 4.0 still wasn’t good enough to publish online. Where there's a will, there's a way, so that rice flour cake will come. But these gluten-free rice flour brownies without refined sugars are a big hit.

Moist, rich chocolate flavor and still relatively healthy, for a brownie anyway. The recipe is super quick, so you'll have amazing brownies on the table in no time.

Ingredients

  • 55 grams coconut oil
  • 50 grams olive oil
  • 50 grams rice flour
  • 10 grams ketan flour (glutinous rice flour)
  • 85 grams dark chocolate
  • 115 grams coconut blossom sugar
  • 10 grams cacao nibs
  • 2 eggs
  • 1 tablespoon vanilla extract

Gluten-free brownies made with rice flour recipe

    1. Preheat the oven to 150°C
    2. Place the coconut oil, organic extra virgin olive oil and chocolate in a bowl and melt au bain-marie until it becomes a nice mixture and the chocolate is completely melted.
    3. In a separate mixing bowl, whisk the eggs, sugar, vanilla extract and the flour until well combined. Add the chocolate mixture and the cacao nibs, then mix for another minute with the hand mixer.
    4. Pour the mixture into a square pan lined with parchment paper (or baking mat) and bake in the oven for about 15–18 minutes.

In the meantime I of course also want to bake something with rice flour that actually succeeds. And these gluten-free rice flour brownies are perfect. Perfect? Yes, really. Moist, rich chocolate flavor and still relatively healthy. I must be honest and say that these brownies do contain a few more calories than, say, an oatmeal cookie. But there's no refined sugar, butter or wheat in them, so for a brownie it's a pretty healthy option.

For these brownies I also use Vivani chocolate, the 92% cocoa. It contains coconut blossom sugar instead of refined sugar and has a rich, pure flavor. Yummy!
