The result was a bit different from what I'm used to. Normally I'm clearly happy with a bake, or it hasn't worked and then I don't post it. With this gluten-free butter cake I wasn't sure; the texture was good and it really looks like a butter cake, but it doesn't quite taste like a traditional butter cake. Even though this bake turned out a little differently than expected, it still has a nice flavor! That's why I'm sharing it anyway.

Butter cake with coconut blossom sugar

  • Baking tin (approx. 20 cm)

Ingredients

  • 300 grams gluten-free flour (or 150 g rice flour and 150 g gluten-free oat flour)
  • 250 grams unsalted butter
  • 150 grams coconut blossom sugar
  • 1 egg (+ 1 egg for brushing)
  • pinch of salt
  • zest of 1 lemon

Butter cake with coconut blossom sugar

    1. Make sure the butter is at room temperature. Then cream the butter together with the coconut blossom sugar.
    2. Add the egg and a pinch of salt, then the flour. Let the stand mixer knead this for a few minutes, or knead by hand.
    3. Grease a butter cake tin about 20 cm in diameter and fill it with the dough mixture. Press it down and, if you like, make a pattern on top with a fork. Brush the top with a beaten egg.
    4. Bake for about 30 minutes at 180°C.

This butter cake with coconut blossom sugar is wonderfully soft and has a subtle caramel-like flavour. Using gluten-free flour makes this recipe suitable for people avoiding gluten, without compromising on taste or texture.

Store the butter cake in an airtight tin and it will stay fresh for several days. It also tastes lovely with a pinch of cinnamon in the dough or with some chopped nuts as a topping. A true classic with a healthy twist.
