Bananenbrood muffins

These banana bread muffins — essentially the 'standard' banana loaf reworked into muffin form — are easy to make and super tasty. The recipe is inspired by muffins you can also find in the supermarket. Today I'm sharing this recipe so you can make them yourself!

Banana bread muffins

These bakes are free from wheat, dairy and refined sugar. For a gluten-free muffin you can replace the spelt flour with, for example, a combination of almond, buckwheat or rice flour.

Ingredients

  • 150 grams spelt flour
  • 2 ripe bananas (preferably on the larger side)
  • 3 Medjool dates, pitted
  • 2 eggs
  • 60 grams raisins
  • 30 ml sunflower oil or olive oil
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • pinch of salt
  • handful of chopped cashews

Banana bread muffins

    1. Preheat the oven to 175°C.
    2. If you like, line a muffin tin with paper muffin cases.
    3. Puree the bananas and dates with a staafmixer or in a food processor and add the salt.
    4. Put this mixture into the keukenmachine and beat it together with the eggs.
    5. In a separate bowl, mix the spelt flour with the baking powder, cinnamon and mixed spice, then slowly add this to the banana mixture in the keukenmachine. Let it mix for a few minutes.
    6. Turn the keukenmachine off and fold in the raisins, sunflower oil and cashews.
    7. Spoon the batter gently into the muffin cases and bake the banana bread muffins for 25-30 minutes until golden brown.
    8. Let the muffins cool slightly, then dig in!

These banana bread muffins are great for breakfast or as a snack. The ripe bananas and Medjool dates provide natural sweetness, so you don't need added sugars. The cashews give a nice bite.

Store the muffins in an airtight container and they'll stay fresh for several days. You can also freeze them and thaw at room temperature later for a quick, nutritious snack on the go.
