For the past month or two I've been training seriously. I always enjoy exercising, but now that I'm working with a trainer I'm much more focused. Twice a week I train with the trainer: once at the gym and once in the park in front of my house. In addition I have a workout of about ten exercises that I can do at home twice a week. So I'm keeping busy! With a holiday to Bali and summer on the horizon this is great, and it meant I had to reconsider what I was eating. As you may know, your muscles need a lot more protein after exercise to recover and grow. That's why this gluten-free chocolate peanut butter snack is ideal for athletes. Chocolate-peanut butter rice cakes, with extra protein and just really delicious.

Chocolate Peanut Butter Snack

As you may know, your muscles need a lot more protein after exercise to recover and grow. That's why this gluten-free chocolate peanut butter snack is perfect for athletes. Chocolate-peanut butter rice cakes, with extra protein and simply very tasty.

Ingredients

  • 6 rice cakes
  • 200 g sugar-free dark chocolate
  • 165 g pitted dates
  • 90 g peanut butter
  • 75 ml water
  • 1 teaspoon vanilla extract
  • pinch of salt

Chocolate Peanut Butter Snack

    1. Melt the chocolate and dip one side of the rice cakes into the chocolate. Repeat this (on the other side) with all the rice cakes. Then place them on a plate or baking sheet lined with parchment and put them in the fridge for about 10 minutes to let the chocolate harden.
    2. Put the pitted dates, peanut butter, water, vanilla extract and salt into the food processor and blend for a few minutes until you have a paste.
    3. Take the rice cakes out of the fridge. Spread them with a generous layer of the peanut butter–date paste and then dip them again into the remaining melted chocolate. Make sure to coat the edges of the rice cakes well.
    4. Let the chocolate-covered rice cakes set in the fridge and store in an airtight container. They will keep for 4–5 days. Perfect for after a workout!

If you use store-bought peanut butter for this recipe, make sure it contains no added sugars such as dextrose or maltodextrin. Regular peanut butter is fine, but an organic nut paste is an even better option. You can also easily make peanut butter yourself by simply processing peanuts and a pinch of sea salt in the food processor for about 5–10 minutes. Simple and it keeps well in a jar in the fridge.

This chocolate peanut butter snack is a delicious treat after exercising. Store the rice cakes in an airtight container in the fridge and enjoy them for 4 to 5 days.
