These apple bars are amazing. They're packed with good nutrients, super easy to make and therefore a really healthy snack. Add that they're easy to pack to take with you, and I think they're perfect. Use oats with a gluten-free label and your bars will be gluten-free, vegan and sugar-free.

Ingredients

  • 115 grams pecans
  • 150 grams (gluten-free) oat flakes
  • 200 grams pitted Medjool dates
  • 2 teaspoons cinnamon
  • pinch of salt
  • 2 apples

Gluten-free and sugar-free apple bars recipe

    1. Preheat the oven to 175°C.
    2. Pit the Medjool dates and soak them in a bowl of water for about 15 minutes to soften.
    3. Line a baking tray with parchment paper and spread the pecans and oats over it. Bake for 15 minutes in the oven.
    4. Drain the dates and put them in a food processor (or immersion blender) and add the apples as well (cut them into smaller pieces first). Process until finely chopped.
    5. Then add the oat flakes and pecans, along with the cinnamon and salt, and process until combined.
    6. Take a brownie pan or another square baking dish with slightly raised edges and line it with parchment paper. Spread the apple mixture over the pan and press down.
    7. Bake another 20 minutes at 175°C. Let cool briefly, then cut into bars. You can store them for a few days in an airtight container in the fridge.

These apple bars are gluten-free and sugar-free, yet delightfully sweet thanks to the Medjool dates and apples. Perfect as a healthy snack between meals or as a treat with tea.
