This cauliflower soup with apple is wonderfully creamy and full of flavor. The apple adds a fresh, sweet touch while leek and curry bring extra depth. Perfect as a light main course or a warming lunch!

Ingredients

  • 1 cauliflower
  • 4 stalks of leek
  • 2 onions
  • 2 cloves garlic
  • 1 apple
  • 2 vegetable stock cubes
  • a drizzle of olive oil
  • 1 tablespoon curry
  • a handful of fresh parsley
  • salt and pepper to taste
  • 1200 ml water

Cauliflower Soup with Apple

    1. Roughly chop the onion and garlic and heat some oil in a large soeppan. Sauté the onion and garlic for about 3 minutes and add 1 tablespoon of curry.
    2. Peel the apple, remove the core and cut it into small pieces. Then cut the cauliflower into large florets and roughly chop the leek.
    3. Add the chopped apple, cauliflower and leek to the onion and garlic. Once the vegetables have started to soften, add 1200 ml of water with 2 vegetable stock cubes. Bring to a gentle boil and simmer for 15 minutes over low heat.
    4. Remove the pot from the heat. Finely chop a handful of fresh parsley and stir it into the soup. Then blend with an immersion blender until the soup becomes creamy. Add pepper, salt and/or a pinch of nutmeg if desired and serve in deep soup bowls. Serve the cauliflower soup with a nice piece of bread, and enjoy!
