The tastiest peanut butter & banana smoothie bowl

Some flavour combinations are so good they seem made for each other. Apple and cinnamon, for example, or goat cheese and honey. I feel the same about peanut butter and banana; it’s such a brilliant combo. The sweetness of the banana combined with the nutty, slightly salty peanut butter makes my foodie heart skip a beat. This smoothie bowl has the same effect on me.

When I was a kid I used to love a Wednesday lunch (we ate at home then) of a bagel with peanut butter, banana, honey and chocolate flakes. Many people say “eeeew” when I tell them that, but if you think about it it’s actually a fantastic combo. Banana–peanut, peanut–chocolate, chocolate–banana, and honey — well, honey goes with almost everything.

This time I didn’t make a sandwich with the golden combo but a smoothie bowl. You might have seen a smoothie bowl here before, but for anyone unfamiliar: you make a creamy banana-based mixture and use that instead of yogurt. Then you top it with whatever you like. So not yogurt with muesli, but for example a banana smoothie topped with granola or fresh fruit.

Peanut butter–banana smoothie bowl

    1. Halve the unfrozen banana, set one half aside and put the other half in the blender. Add the frozen banana, peanut butter, honey and cacao nibs and blend until you have a smooth, creamy mixture. A small splash of water will make it less thick if you prefer a looser texture.

    2. Slice the reserved half banana, pour the banana mixture into a bowl and arrange the banana slices on top. Finish with some walnuts and, if you like, extra cacao nibs and honey. Enjoy your delicious breakfast!

A good smoothie bowl stands or falls with your blender. If you want that thick, creamy texture that lets your spoon stand upright, you need power: frozen banana simply demands more from your blades than a handful of soft fruit. Start on the lowest speed, only add water if it’s really necessary and use the tamper instead of a spoon. That way you keep it thick enough to pile on generous toppings.

You eat a smoothie bowl with your eyes as much as your mouth. Serve it in a deep bowl with a wide rim so banana slices, walnuts and cacao nibs sit nicely next to each other instead of sinking. At Cookinglife you’ll find blenders that can handle frozen fruit with ease and bowls in every size and colour. That way your breakfast is on the table in seven minutes — and looks like it took much longer.
