I was craving something tasty and needed to switch off for a bit. I didn't feel like going to the supermarket, though. Luckily I always keep the ingredients for these apple cinnamon buns on hand.

Apple Cinnamon Buns

These are deliciously sweet buns for breakfast this coming weekend. A nice bit of kitchen tinkering without needing a complicated shopping list.

Ingredients

  • 75 g gluten-free oats / oat flour
  • 50 g gluten-free self-raising flour
  • 125 g full-fat quark
  • 1 egg
  • 1 large sweet apple
  • 2 teaspoons cinnamon
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • pinch of salt
  • 1 teaspoon baking powder

Apple Cinnamon Buns

    How to make apple cinnamon buns?

    1. Preheat the oven to 190°C
    2. Grind the oats into flour in the blender or food processor. Then add the self-raising flour, together with the cinnamon, the salt and the baking powder.
    3. Then add the Greek yogurt, olive oil, the egg and the honey and stir until you have a smooth batter.
    4. Peel the apple and cut it into small cubes. Then fold the apple cubes into the batter.
    5. Divide the dough into 4 balls on a baking tray lined with baking paper. Shape them into neat little rounds — you don't have to press them as flat as I did in my photos ;-).
    6. Bake the buns in the oven for 20 minutes until nicely golden brown.

I came across the recipe for these apple cinnamon buns online. The buns were originally made with spelt flour; because I wanted to make gluten-free buns, I adjusted the recipe slightly. I also used less egg.

These apple cinnamon buns are wonderful warm from the oven and perfect as breakfast or a snack. They're gluten-free, deliciously moist from the quark and apple, and have a lovely sweet taste from the honey and cinnamon. Serve them on a nice plate and enjoy!
