Next Friday is Valentine's Day and I can't think of anything better than surprising someone with homemade cookies. Isn't that much nicer than a card or a bouquet? With these Gluten-free Chocolate cookies you're also almost guaranteed that everyone can enjoy them; they're not only gluten-free, but also dairy-free and free from refined sugars.

Chocolate cookies

When Valentine's Day is near, these cookies are a lovely surprise. A nice change from flowers or a card. In addition to being gluten-free, they're also dairy-free and free of refined sugars.

Ingredients

  • 120 gram buckwheat flour
  • 80 gram almond flour
  • 100 gram coconut oil
  • 4 teaspoons raw cacao powder
  • 30 gram coconut blossom sugar
  • 2 tablespoons agave syrup (or honey)
  • 1 teaspoon speculaas spice
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder (with cream of tartar)
  • 20 gram dark chocolate (sugar-free)

Chocolate cookies

    1. Preheat the oven to 160°C.
    2. Put the buckwheat flour, almond flour, speculaas spice, baking soda, baking powder, cocoa powder and the coconut blossom sugar in a mixing bowl and stir together.
    3. Melt the coconut oil in a small bowl.
    4. Add the coconut oil and the agave syrup to the dry ingredients and mix first with a spoon, then knead the dough well with your hands. It will probably remain quite crumbly.
    5. Line a baking tray with parchment paper and press a generous ball of dough flat on it. Cut out a cookie with a cutter and remove the surrounding dough. Add those scraps back to the remaining dough and repeat until you've used all the dough.
    6. Bake the cookies for about 15–20 minutes and let them cool completely.
    7. Meanwhile melt the chocolate with about 2 tablespoons of water so the chocolate becomes fluid. Use a spoon to drizzle chocolate over the cookies and reheat the mixture if the chocolate cools down too much. Let the chocolate set and enjoy! Be careful, the cookies are crumbly!
