Last time I made a lovely banana cake and this time a cake that does include banana, but it certainly isn't the main feature."

This raisin date cake, made for us by a fellow blogger, is perfect to bake at the weekend. And of course you can take a slice to work every day!

Ingredients

  • 250 grams dates (pitted)
  • 2 small bananas or 1 large
  • 100 grams pecans
  • 200 grams raisins
  • 200 grams sultanas
  • 100 grams spelt flour
  • 2 tsp mixed spice
  • 2 tsp baking powder
  • 3 tbsp amaretto
  • 2 eggs (whites only)

Date raisin cake

    1. Preheat the oven to 180°C
    2. Line a loaf pan with baking paper.
    3. Place the dates in a small saucepan with 200 ml boiling water and let simmer gently for 5 minutes.
    4. Pour the liquid into a bowl (catch it — you'll need it shortly) and put the dates in a blender. Add the bananas and 100 ml of the date liquid and blend until smooth.
    5. Mix the nuts, dried fruit, spelt flour, mixed spice and baking powder in a bowl, add the date puree and the amaretto and stir until everything is combined.
    6. Whisk the egg whites to soft peaks and fold them into the cake mixture. Pour the mixture into your loaf pan (it will be quite full) and then top with the remaining pecans.
    7. Bake for about an hour (or until golden brown and crisp and a wooden skewer comes out clean). Let cool completely before slicing.

This date and raisin cake is wonderfully dense and full of flavour. The combination of dates, banana and amaretto provides a naturally sweet cake without added sugars. Always let the cake cool completely before you cut it so it keeps its texture.

Store the cake in an airtight container in a cool place. It will keep for several days. You can also freeze slices and thaw them individually for a quick treat. Perfect with a cup of tea or coffee.
