Remove the tuna and mix it with the mayonnaise and olive oil. Chop the shallots and mix this with the tuna mixture and season with salt and pepper.
Roast the bread and cut off the scabs. Cut the bread in half.
Then cover the bread as follows. First place a few slices of cheese on it, then some lettuce, add the tuna salad on top and finish it with tomatoes. Optionally, you can also put some mayonnaise on the sandwich itself.
