Dumplings are pockets of dough with a savory filling that can be folded in various ways and styles. They're often considered the Chinese version of ravioli. The filling can be made from ingredients like ground pork, Napa cabbage and spring onions, but there are countless other variations. Dumplings work as a snack, for lunch, as a little bite between meals or as a main dinner course.

Let the dumpling wrappers thaw in the package or cover them with a sheet of plastic to prevent drying out.
Pat the shrimp dry and pulse them briefly in a food processor or chop them finely with a chef's knife (the latter takes a bit longer). They should still retain some texture, so don't process them too finely.
Place the chopped shrimp in a bowl and mix in the remaining ingredients. Keep the filling refrigerated until ready to use.
Mix the dipping sauce ingredients and also chill that in the fridge for a bit.
Grab your dumpling maker. Lay it open and dust with a little flour to prevent the wrappers from sticking. Place one wrapper on it and put 2 tsp of filling in the center of the dough. Moisten the edge slightly and close the dumpling maker so the edges seal together!
When all the dumplings are filled, it's time to steam them. For this, take a frying pan. Heat a shallow layer of water in it. Place the steamer basket in the pan, making sure the bottom isn't completely submerged. Put the dumplings on a piece of parchment paper in the steamer basket. Make sure the dumplings don't touch each other or the sides, or they'll stick. You can also stack multiple steamer baskets so you can steam more at once. It takes about 5 minutes for the dumplings to cook through!
Serve with the dipping sauce and optionally some fresh chives.
Eat them right away while the dumplings are still nice and warm!
