Brownie ballen

When I started working on this recipe, I immediately decided to make three different kinds of balls: with cacao nibs, desiccated coconut and cocoa powder. This recipe is super easy to make and not only looks great, but tastes delicious too! Enjoy!

Be careful not to add too much coconut oil with the spoon, otherwise they'll become a bit too sticky.

Ingredients

  • 1 tbsp coconut oil
  • 1 tbsp raw cacao
  • 2 tbsp cacao nibs
  • 100 g pitted medjool dates
  • 80 g mixed nuts (e.g. almonds and cashews)
  • seeds from 1 vanilla pod or 1 tsp vanilla powder
  • Pinch of salt

Brownie balls

    1. Process the pitted dates in the food processor until chopped, then add nuts, coconut oil, cocoa powder, salt and vanilla extract. Keep the mixture slightly coarse — not too finely processed.
    2. Roll the mixture into balls and press them together firmly.
    3. Sprinkle cacao nibs on a plate and roll the balls in them. You can also use desiccated coconut or raw cocoa powder.
    4. Let chill in the fridge for half an hour.

These brownie balls are a delicious, healthy treat without refined sugars or flour. The natural sweetness of the medjool dates gives a rich, caramel-like flavor that pairs perfectly with the cacao nibs.

Store the brownie balls in an airtight container in the refrigerator. They will keep there for up to a week. You can also freeze them for longer storage.
