Cloud bread

Cloud bread; suddenly it appeared and because of the name (what the hell is cloud bread???) I wanted to try making it myself. Cloud bread, a thing that blew in from America. It’s very low in calories, low-carb, gluten-free and high in protein. Sounds great, right? You can find recipes everywhere and they’re almost all the same, except some use sugar substitutes like stevia. You can also use either cream cheese or hüttenkase, so that might be worth experimenting with.

These rolls look like little clouds on your plate. Delicious as a snack or for dipping in sauces.

Ingredients

  • 3 eggs (M)
  • 3 tablespoons hüttenkase
  • 1 tablespoon honey
  • half teaspoon baking powder
  • pinch of salt

Cloud bread

    1. Preheat the oven to 150°C.
    2. Line a baking sheet with parchment paper while the oven heats up.
    3. Separate the egg whites from the yolks and beat the egg whites in a clean, grease-free bowl until stiff peaks form.
    4. Beat the yolks together with the hüttenkase, honey, baking powder and salt. This will become a creamy mixture.
    5. Gently fold the yolk mixture into the whipped egg whites using a spatula.
    6. Spoon rounds of the mixture onto the baking sheet. You can make between 12 and 15, depending on how large you make the rounds.
    7. Bake for about 15–20 minutes, until nicely golden brown. Enjoy!

This time I chose hüttenkase and used honey as the sweetener. Don’t worry, there’s only one tablespoon and it makes about 15 rolls. I love cloud bread! To be honest, it’s not really bread, because without flour it lacks the typical bread texture. You also can’t really slice it open to top it, for example. But it’s a very tasty alternative and super easy to make.

Especially if you’re trying to eat low-carb or just want a protein-rich snack, these cloud breads are a great choice. Also wonderful if you eat gluten-free! And if you’d rather not use honey, you can try stevia as a sweetener. These buns don’t need much sweetness. Will you try them sometime?
