The perfect stuffed sweet potato

These stuffed sweet potatoes with bacon are delicious and easy to make. The sweet potatoes are roasted in the oven until tender, then filled with melted Parmesan, crème fraîche, crispy fried bacon and spring onion. The result is a flavorful combination of sweet and savory, perfect as a side dish. Simple, but guaranteed to be a hit at the table!

Ingredients

  • 2 sweet potatoes
  • A handful of grated Parmesan cheese
  • 2 tbsp crème fraîche
  • 125 g smoked bacon lardons
  • 2 spring onions

How to make the stuffed sweet potatoes?

    1. Preheat the oven to 180 °C. Wash the sweet potatoes, prick them here and there with a fork and wrap them in aluminum foil. Place the potatoes on the oven rack and leave them for about 50 minutes. Turn them occasionally and prick them to check if they're done.
    2. Meanwhile, fry the bacon in a frying pan until crisp, slice the spring onions into rings and grate the cheese.
    3. When the potatoes are cooked, cut them in half, sprinkle the halves with cheese and put them back in the oven for another 5 minutes so the cheese melts nicely.
    4. Finally spread some crème fraîche on top, and finish with the fried bacon and spring onion. Enjoy!
