Waffles for breakfast… now that's a wonderful way to start the day, isn't it?

Not everyone finds it easy to get enough vegetables and fruit in every day. It might sound strange, but vegetables often work surprisingly well as an ingredient in something like a cake or another sweet treat.

These waffles are another great example of healthy and delicious all at once. Carrots give the waffles a lovely natural sweetness, while courgette keeps them wonderfully soft. Add a generous topping of fresh fruit and you're off to a great — and tasty — start!

Breakfast waffles with a fresh fruit topping

These breakfast waffles are made with oats, courgette and carrot, making them a nourishing start to the day. Top them with banana, blackberries, walnuts and peanut butter for a delicious and healthy breakfast.

Ingredients

  • FOR THE WAFFLES:
  • 1 egg (medium)
  • 30 g egg whites (available in cartons)
  • 65 g carrots
  • 80 g courgette
  • 50 g oats or flavoured oats (I used the mixed berry flavoured oats from body&fitshop)
  • ON TOP:
  • 40 g banana
  • 70 g blackberries
  • 6 g walnuts
  • 15 g misterkitchens peanut butter with cranberries and cinnamon

Breakfast waffles with a fresh fruit topping

    1. Preheat your waffle iron and grease it with oat-courgette-peanut butter cookies (I use the ones from body&fitshop).

    2. Blend all the waffle ingredients together in a food processor until you have a smooth batter.

    3. Pour the batter into the waffle iron and cook the waffles until they are nicely golden brown.

    4. Place the waffles on a plate. Slice a banana on top, then scatter over the blackberries, walnuts and peanut butter. Finish with a dusting of cinnamon if you like.

    Dig in and enjoy!

These waffles are not only delicious but also packed with vegetables and fibre. Perfect for an energised start to your day — and they're ready in no time.

Feel free to mix up the toppings to suit your taste. Other seasonal fruits or a different nut butter work just as well on these healthy breakfast waffles.
