Garnalen met avocadomousse en paprika

I was allowed to choose a recipe from Anneke's blog. That turned out to be quite a task, because there were so many delicious things to choose from! Soon I came across a beautiful photo of sautéed shrimp with avocado and bell pepper. The colors really appealed to me and it's a very 'pure' recipe — and I'm a big fan of eating as pure and 'clean' as possible. My choice was made: shrimp on a bed of avocado and bell pepper.

Shrimp with avocado mousse and bell pepper

Shrimp with avocado mousse and bell pepper is a fresh and flavorful starter that's perfect for a dinner with friends. Ripe avocados are mashed with lemon juice, salt, pepper and sautéed bell pepper cubes, then garnished with crisp arugula. Large shrimp are briefly cooked with garlic and olive oil and then artfully placed on the avocado mousse. This dish not only offers a delicious combination of flavors but also looks beautiful on the plate. Perfect for a quick, easy and impressive meal.

Ingredients

  • 6 large shrimp
  • 2 ripe avocados
  • 1 red bell pepper
  • 1 yellow bell pepper
  • a handful of arugula mix
  • 1 spring onion
  • quarter of a red chili pepper
  • juice of half a lemon
  • 2 cloves garlic, pressed
  • olive oil
  • sea salt
  • pepper

How to make shrimp with avocado mousse and bell pepper?

    1. Cut the bell peppers into cubes and briefly sauté them in a frying pan with a minced clove of garlic.
    2. Scoop out the avocado flesh and mash it. Add the juice of half a lemon, some salt and pepper, and about half of the diced bell pepper.
    3. Warm some olive oil with a pressed clove of garlic in the frying pan and quickly cook the shrimp until they turn nicely pink/light brown. Sprinkle with a little salt and pepper and drizzle with a little lemon juice.
    4. Place a ring mold on a plate and spoon the avocado mixture into it, press down and carefully remove the ring. Top with some arugula and then the shrimp. Arrange some more bell pepper cubes around it and a few arugula leaves for garnish. Enjoy!

This dish is perfect as an impressive starter for a dinner party. The combination of creamy avocado mousse with garlicky shrimp and sweet bell pepper creates a delightful interplay of flavors. Always use ripe avocados for the best texture and taste.
