Omelet met boerenkool en zalm

All the fuss about superfoods lately; I don't get it. It's nothing more than a term for products with particularly high nutritional value, and superfoods are a great addition to a healthy diet. I already eat healthily, but the wheatgrass shot I take in the morning gives my skin and gut flora a boost. And superfood doesn't always have to be exotic or come from far away. Our own classic Dutch kale is a superfood too; it's rich in fiber, iron, vitamins, minerals, magnesium and calcium. And besides, it's really delicious! Every Friday I make this quick Omelet with kale and salmon in less than 10 minutes. Now that's what I call healthy fast food.

Omelet with kale and salmon

Our homegrown Dutch kale is a superfood too; it's rich in fiber, iron, vitamins, minerals, magnesium and calcium. And on top of that, it's super tasty!

Ingredients

  • 2 to 3 eggs
  • 2 generous handfuls of kale
  • 75 grams smoked (or fresh) salmon
  • pinch of salt
  • pinch of (garlic) pepper
  • a little dried or fresh dill
  • a little dried oregano
  • optional 2 slices of (gluten-free) bread

Omelet with kale and salmon

    1. Beat the eggs. Heat some olive oil or coconut oil in the pan and very briefly sauté the kale (1 to 2 minutes), tossing it well.
    2. Pour the beaten eggs over the kale and tilt the pan so the kale gets covered.
    3. Now add the herbs and, if you like, toast your bread.
    4. When the omelet is nicely golden brown, place the slices of salmon on the omelet as the very last step; they shouldn't cook too much. Remove the omelet from the heat and serve.

This omelet with kale and salmon is a nutritious and quick meal you can have on the table in no time. The combination of protein from the eggs and salmon makes this dish particularly filling and healthy.

Serve the omelet straight from the pan onto a nice plate. Add a slice of (gluten-free) bread for a complete meal if you like. Fresh or dried dill gives the dish a lovely, fresh flavor.
