It was an idea that, I think, had been in his head for almost a year: Chris wanted to make a sushi burger. And by burger he meant that the 'buns' would be rice, with a sushi filling in between. I thought it was a brilliant idea! Because anything to do with sushi is delicious, right?

Cook the pandan rice.
Meanwhile, cut the salmon and surimi into cubes, and slice the cucumber and avocado.
Make a dressing from the mayonnaise and wasabi. Thin it with a little water.
When the rice is done, put it into a ring mold. Press it down firmly and then remove the rice from the mold. Drizzle some soy sauce over it.
Cut 4 nori sheets to the size of the ring mold and lay them on the rice. Now top with salmon, surimi, cucumber, wakame and avocado, and add some dressing.
Now make the second rice 'burger'. Place it on top of the filling. Repeat until you have 4 burgers.

When I shared a photo of the sushi burgers on Instagram, I seriously got private messages asking for the recipe. A good sign, I thought. Haha! It always takes a while for me to develop a recipe, so I try to have a few recipes in the pipeline. I love cooking and blogging, but if you have to make a recipe, it quickly feels like a chore. And I think it should stay fun :D!
What do you think this sushi burger looks like? I'll be honest: it's quite tricky to eat. Don't expect to eat it whole, because as soon as you start, the burger falls apart. So you can certainly eat it with a knife and fork. But that shouldn't spoil the fun! The flavors are amazing. It's really very, very tasty! And it's a nice change, too, isn't it?
