Well, the veggie sausage rolls from Wednesday have barely cooled down and I'm already bombarding you with vegetarian quesedillas. What's with all this vegetarian fuss? With all the increasingly good meat substitutes available, I don't really feel the need for meat anymore. We're learning more and more how bad meat is for our planet. It takes an enormous amount of water to 'produce' meat. For me personally it also increasingly feels wrong to eat meat. That's why vegetarian alternatives are appearing on the table more often, which I of course love to share with you.

Vegetarian quesedillas with avocado

These vegetarian quesedillas with avocado are delicious and easy to make. Fry the plant-based chicken pieces until golden, then mix the corn, bell pepper and red onion, and spread the mashed avocado, red chili and lemon juice over the wraps. Fill the wraps with the vegetables, chicken pieces and grated cheese, and fry or grill the quesedillas until crispy. Ideal for a quick, healthy dinner or lunch!

Ingredients

  • 150 g cooked corn
  • 1 bell pepper
  • half a red onion
  • 175 g plant-based chicken pieces
  • 2 avocados
  • 1 lemon
  • small piece of red chili
  • 4 piadinas (or gluten-free wraps)
  • 75 g grated cheese
  • salt and pepper

How to make vegetarian quesedillas with avocado?

    1. Heat some oil in a pan and fry the plant-based chicken pieces until nicely golden.
    2. Cut the bell pepper into cubes and do the same with the red onion. Mash the avocados and finely chop a small piece of red chili. Add this to the avocado along with the juice of half a lemon.
    3. Then mix the corn with the onion and bell pepper.
    4. Spread avocado over one whole piadina. Now distribute the vegetables on top, then add the vegetarian chicken pieces. Garnish with grated cheese and place the second piadina on top.
    5. You can fry or grill the piadina in a pan; I used my contact grill. Super handy, because then you don't have to flip the whole thing. Cut the crispy piadina in half and enjoy!

These vegetarian quesadillas are perfect for a quick lunch or a light meal. The combination of creamy avocado, crunchy vegetables and plant-based chicken pieces creates a deliciously filled piadina that will satisfy everyone at the table.

Want the quesadillas a bit spicier? Add extra red chili to the avocado spread. You can also experiment with other vegetables or types of cheese to taste. Serve immediately after cooking for the best results.
