Quesadilla met geitenkaas

A quesadilla is, for Mexicans, what a tosti is for us in the Netherlands. To be honest, I prefer to side with the Mexicans here, because a quesadilla is so much tastier than a tosti. Especially this fairly simple gluten-free quesadilla, where the flavors of chicken, bell pepper and avocado combine beautifully with goat cheese.

Quesadilla with Goat Cheese

This gluten-free quesadilla with goat cheese is a quick and tasty meal packed with fresh vegetables and juicy chicken. Perfect for a weeknight when you want something delicious on the table without much fuss.

Ingredients

  • 4 large gluten-free wraps or tortillas
  • 300 g chicken breast
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 avocado
  • 1 clove of garlic
  • 150 g grated goat cheese (you can omit this)
  • paprika powder
  • salt and pepper
  • a handful of fresh basil

Quesadilla with Goat Cheese

    1. Chop the onion and press the garlic with a garlic press, cut the bell peppers and chicken breast into cubes. Don’t make the cubes too large, otherwise the quesadilla will become very thick.
    2. Cut the avocado into slices.
    3. Sauté the onion and garlic in a frying pan and cook the chicken through with salt, pepper and about 1 teaspoon paprika powder. When the chicken has started to change color, add the bell pepper cubes as well.
    4. Spread goat cheese over one tortilla. Place the chicken and peppers on top, then the avocado. Add another layer of goat cheese and place a second tortilla on top.
    5. Use a pan with a good non-stick coating, set over medium heat and carefully place the quesadilla in the pan.
    6. After a few minutes, carefully flip the quesadilla. Handy trick: take a plate smaller than the pan, place it on the tortilla, hold the plate and turn the pan over. The quesadilla will now be upside down on your plate and you can place it back in the pan.
    7. Garnish with some basil — it tastes wonderful with it. Enjoy!

The tortillas I used were quite large and one quesadilla per person, together with, for example, a salad, makes a fine evening meal. Making quesadillas is really not difficult; the trick is really just flipping the quesadilla in the pan. But of course I give you a handy tip for that in the instructions below!

If you do eat regular cow's milk cheese, you can of course use a low-fat variety. Actually this quesadilla tastes good with any type of cheese and will even be delicious without cheese. At home my boyfriend nearly ate his hands off and I believe he shouted "so good!" about ten times — a good sign!
