Gezond en snel quinoa ontbijt

This healthy and quick quinoa breakfast is a fantastic start to your day. There has been quite a bit of discussion about quinoa in recent years — at least from me. Is it a grain or not, since technically it's a seed? People call it a pseudo-cereal. What that means is that it's not officially classified as a grain, but most people and even nutritionists tend to lump it into that category.

Recipe

Healthy and quick quinoa breakfast

This quick quinoa breakfast is a delicious, healthy and nutritious way to start your day. The quinoa is cooked in almond or soy milk and flavored with agave syrup and cinnamon. The dish is finished with blueberries, which you can either stir in or add later for a fresh bite. For extra crunch you can add almonds, pecans or flaxseed. This nutritious breakfast is full of vitamins, minerals and fiber, and is easy to adapt to your preferred level of sweetness by using more or less sweetener. Perfect for starting the day right!

Equipment

  • Pan
  • Sieve
  • Bowl
  • Wooden spoon

Ingredients

  • 50 g quinoa
  • 250 ml almond or soy milk
  • 1 teaspoon agave syrup
  • 1 teaspoon cinnamon
  • 75 g blueberries (fresh/thawed)

How to make a healthy and quick quinoa breakfast?

    1. Rinse the quinoa thoroughly to wash away the so-called saponins. They give the quinoa a bitter taste, which isn't pleasant.
    2. Put the quinoa and the almond or soy milk in a medium saucepan and bring to a boil. Stay in the kitchen and let the quinoa simmer over low heat for about 15 minutes. Stir well occasionally, otherwise the quinoa will stick to the bottom.
    3. After the quinoa has cooked for about 15 minutes, stir in a teaspoon of agave syrup and a teaspoon of cinnamon. Mix well. You can also stir the blueberries in now, but the quinoa will turn slightly blue.
    4. I therefore garnish the quinoa with blueberries and only stir them in at the table. Also lovely with some almonds, pecans or flaxseed. Not sweet enough? Stir in another teaspoon of syrup or vanilla extract.

This quinoa breakfast is a delicious and nourishing way to start the day. The combination of plant-based milk, cinnamon and blueberries provides a naturally sweet flavor without refined sugars. Perfect when you want a quick and healthy breakfast.

Feel free to vary the toppings with almonds, pecans or flaxseed for extra texture and nutrients. You can also cook the quinoa the night before and reheat it in the morning for an even faster start.
