Stuffed avocados with shrimp

Stuffed avocados with shrimp is a simple and healthy dish, ideal as a starter, lunch or light main course. The avocado flesh is mixed with cucumber, spring onion and Hollandse garnalen, and seasoned with a lemon-dill dressing. The mixture is spooned back into the avocado shells for an attractive, no-bake presentation.

Ingredients

  • 2 avocados (for a main course use 4 avocados)
  • 2 spring onions
  • 1 cucumber, about 7 cm long
  • 100 grams peeled Hollandse garnalen
  • 1 tablespoon (sugar-free) mayonnaise
  • 3 sprigs of fresh dill
  • ½ lemon
  • salt and pepper to taste

How to make stuffed avocados with shrimp?

    1. Cut the avocados in half and remove the pit from each. Then score the avocados lengthwise and crosswise, being careful not to cut through the skin. Carefully scoop the avocado flesh out of the shells and place it in a separate bowl. Keep the avocado shells aside.
    2. Meanwhile, dice the cucumber and slice the spring onions into rings. Gently fold the cucumber and spring onion together with the shrimp into the avocado cubes.
    3. Squeeze the half lemon. Make a dressing from salt, pepper, dill, mayonnaise and the lemon juice, and optionally add a teaspoon of water. Pour the dressing over the avocado mixture and fold in very gently.
    4. Spoon the avocado mixture with the dressing back into the empty avocado shells and serve with a sprig of fresh dill on top. Enjoy!
