This gluten-free spiced apple pie is absolutely perfect for this time of year. I found the inspiration during my trip to Malta, where I ate a wonderfully tasty apple pie. The flavor was spicy and immediately reminded me of autumn and winter! And although it was still 30 degrees in Malta, when I returned home to the Netherlands it already felt like real autumn. That’s why I wanted to make this delicious spiced apple pie right away.

Spiced Apple Pie

This spiced apple pie is a delightful winter variation with a fresh twist thanks to the lime juice in the filling. The base, made from almond flour and gluten-free baking flour, is flavored with speculaas spices, cinnamon, cardamom, and cloves. The apple filling is finished with a crunchy crumble layer of rolled oats and almond flour. Perfect for a cozy autumn or winter moment with friends and family!

Ingredients

  • Base:
  • 100 g almond flour
  • 220 g gluten-free baking flour
  • 40 g honey
  • 125 g coconut oil
  • 1 egg
  • 2 teaspoons speculaas spice blend
  • 1 teaspoon cinnamon
  • pinch of cardamom
  • 1/2 teaspoon ground cloves
  • zest of half a lime
  • pinch of salt
  • Filling:
  • 1 kg Goudreinetten apples
  • juice of 1 lime
  • 1 teaspoon speculaas spice blend
  • 1 teaspoon cinnamon
  • Crumble:
  • 80 g almond flour
  • 60 g rolled oats
  • 20 g oat flour
  • 30 g honey
  • 50 g coconut oil
  • 1 teaspoon cinnamon
  • 1 teaspoon speculaas spice blend
  • 1/2 teaspoon ground cloves

How to make a spiced apple pie?

    1. Mix the almond flour with the gluten-free baking flour and add the cinnamon, speculaas spice blend, cardamom, cloves and salt. Grate the zest of half a lime over the bowl. Then add the coconut oil, honey and the egg and mix until the dough has a nice texture. Form it into a ball and place it covered (e.g. with cling film) in the fridge.
    2. Meanwhile, continue with the crumble dough. Mix the almond flour with the rolled oats and oat flour, cinnamon, speculaas spice blend and ground cloves. Then add the honey and coconut oil and knead with your hands until a dough forms. Set this aside.
    3. Preheat the oven to 180°C.
    4. Peel the apples. Remove the cores and cut them into small pieces. Put them in a bowl and add the lime juice, cinnamon and the speculaas spice blend. Mix together.
    5. Grease a 28 cm springform pan with olive oil or butter. Take the base dough out of the fridge and press the dough into the springform pan. Make sure the edges are nicely high and preferably evenly thick all around.
    6. Then spread the apple mixture over the springform pan and press down gently. You may have a little left over; you can snack on that while the pie is in the oven.
    7. Crumble the crumble mixture into chunks and distribute them over the springform pan. Use it all—make sure the pie is well covered.
    8. Bake for 40-50 minutes until golden brown. If the top becomes too dark, you can cover the pie with some aluminium foil and return it to the oven for the remaining time.

This spiced apple pie is perfect for a cozy moment with family or friends. The combination of speculaas spices, cinnamon and cardamom gives the pie a wonderfully warm and festive character. Serve it warm for the best result.
