After all the eating and baking during quarantine, a healthy sweet snack is more than welcome! I’ve got a delicious recipe for vegan sweet potato brownies. This is a healthy twist on the classic chocolate brownies, but they’re just as tasty and fudgy! Warning: they’re hard to resist, so they usually disappear in no time ;-).

Vegan sweet potato brownies

Vegan sweet potato brownies are a healthy and fudgy treat, perfect for anyone who loves chocolate. The batter is made from mashed sweet potato, cocoa powder, peanut butter, maple syrup, and nuts, then baked until the brownies are soft and gooey. Adding sliced almonds and fresh fruit gives an extra crunchy and fresh topping. Ideal as a snack or served warm with a scoop of vegan ice cream.

Ingredients

  • 1 sweet potato about 250 g
  • 50 g cocoa powder
  • 8 tablespoons coconut oil or olive oil
  • 125 g peanut butter
  • 1 teaspoon vanilla extract
  • 50 g flour of choice
  • 150 ml maple syrup or pitted dates (soak for 10 minutes in water if they’re too dry)
  • a pinch of sea salt
  • 1 teaspoon baking powder
  • a pinch of cinnamon
  • 75 g chopped nuts of choice
  • handful of sliced almonds for garnish
  • handful of fresh red berries for garnish

How to make vegan sweet potato brownies?

    1. Preheat the oven to 175°C. Place the sweet potato in a baking dish and bake for 1 hour at 175°C. Then let it cool thoroughly in the refrigerator.
    2. Chop the nuts of your choice into coarse pieces. Warm the 8 tablespoons of coconut oil for 30 seconds in the microwave.
    3. Once the sweet potato has cooled well, peel it and mash it with a fork in a mixing bowl. Add the maple syrup, coconut oil, vanilla extract and the peanut butter to the sweet potato. Mix well with a spatula, then add the cocoa powder, baking powder, cinnamon and salt. Mix everything together and finally fold in the flour along with the chopped nuts.
    4. Take a small square baking dish or pan and line it with parchment paper. Press the paper down well and pour the sweet potato brownie mixture into the pan. Smooth the top with a spatula.
    5. Place the pan in the oven for 30–35 minutes at 175°C. In the last 10 minutes you can sprinkle sliced almonds on top so the sweet potato brownie gets a nice crunchy layer.
    6. Remove the sweet potato brownie from the oven and let it cool briefly. The brownie should remain a bit fudgy, even after cooling. Cut it into 8 equal pieces and top with some fresh fruit or serve as a dessert with a scoop of ice cream. It's best eaten warm so it's even fudgier. Yum!
