Sugar-free banana bread with speculaas is a healthy snack, ideal to take on the go. The batter of almond flour, ripe bananas, eggs and speculaas spice is mixed and baked in the oven until golden brown. This nutritious banana bread has a lovely spiced flavor and can easily be frozen in slices for later use.

Ingredients

  • 160 g almond flour
  • 3 ripe bananas (large, otherwise 4 small)
  • 3 eggs
  • 2 tablespoons speculaas spice
  • 1.5 tsp baking powder
  • 1 tsp vanilla extract
  • pinch of salt

How to make sugar-free banana bread with speculaas?

    1. Preheat the oven to 190°C.
    2. First mix the dry ingredients: almond flour, speculaas spice, baking powder and salt. In another bowl whisk the beaten eggs with mashed bananas and vanilla extract. Combine the flour mixture with the eggs and bananas.
    3. Line a loaf tin with parchment paper. Pour the batter into the tin.
    4. Place in the oven and bake for 50 minutes at 190°C.
    5. Slice the banana bread once it has cooled. You can then wrap the slices individually and store them in the freezer.

This sugar-free banana bread with speculaas spice is perfect as a healthy snack or breakfast. Using almond flour also makes it gluten-free. Let the bread cool completely before slicing so it stays nice and firm.

Make a big batch and freeze the slices individually. That way you always have a healthy snack on hand. Take a slice out of the freezer the evening before and let it thaw slowly in the fridge or on the counter.
