Havermout koekjes met cranberry en cacao nibs

If you, like me, can't eat wheat or simply fancy some delicious cookies, this recipe for oatmeal cookies with cranberry and cacao nibs is fantastic. For people with a gluten allergy: be careful, because only specially labeled oats and oatmeal are gluten-free. You'll be surprised that cookies without sugar can taste so good, and this way you can enjoy a cookie every day.

Oatmeal cookies with cranberry and cacao nibs

Cacao nibs are bitter but give the cookie a real crunch. Combined with the sweetness of the cranberry and the oats, it all balances nicely. And it's really hard to stop at just one cookie.

Ingredients

  • 100 gr oats
  • 13 gr melted coconut oil
  • 2 tbsp agave syrup/honey
  • 1 tbsp desiccated coconut
  • 1/2 tsp baking powder
  • 2 tbsp dried cranberries
  • 20 gr extra dark chocolate (92%)
  • 1 tsp cacao nibs – I picked these up at the organic supermarket

Oatmeal cookies with cranberry and cacao nibs

    1. Preheat the oven to 190°C. Mix the oats, coconut oil, honey, desiccated coconut, baking powder and a pinch of salt in a large bowl. Add 60 ml hot water and knead everything into a smooth dough. Fold the cranberries through the dough.
    2. Roll the dough into about 8–10 balls the size of a golf ball. Press them flat on a baking sheet lined with parchment paper. Bake for 15–20 min until golden brown. Keep a close eye on the oven, especially if you use agave syrup, as it burns more quickly. Let the cookies cool.
    3. Melt the dark chocolate au bain-marie in a bowl together with the cacao nibs. Using a spoon, drizzle zigzagging lines over the cookies and spoon a little dollop with cacao nibs onto each cookie. Let the chocolate set for about 1–2 hours.

These oatmeal cookies are a delightful and relatively healthy treat. The combination of cranberries and cacao nibs gives a nice bite and a hint of sweetness. Perfect as a snack or with a cup of tea or coffee.

Store the cookies in an airtight container at room temperature. They will keep for a few days. You can also replace the cranberries with other dried fruits of your choice, such as raisins or apricots.
