Since I work during the week and like to have a snack around eleven, I went looking for an energy bar recipe again. This recipe for gluten-free and sugar-free oat bars turned out delicious! They keep well and are an ideal healthy snack for work.

The recipe is very simple: you throw all the ingredients into a food processor, let it run for a moment, tip the contents onto a baking tray and pop it in the oven. Then melt some chocolate, spread it over the oat bars and you're done.

Ingredients

  • 150 grams gluten-free oats
  • 50 grams peanut butter
  • 1 banana
  • 1 egg
  • 50 grams hazelnuts (or, if desired, hazelnut flour)
  • 60 grams dark chocolate (92% Vivani)
  • 1 tablespoon coconut oil

    1. Preheat the oven to 180°C.
    2. Put the oats, peanut butter, banana, the egg and coconut oil into a food processor or mixer.
    3. Coarsely chop the hazelnuts and fold them into the mixture with a spatula. Spread the mixture onto a baking tray lined with parchment paper and press it into a neat square.
    4. Bake the oat bars in the oven for about 30 minutes.
    5. Let them cool completely. Once the bars have cooled slightly, melt the chocolate au bain-marie and spoon (or pour) it over the oat bars. Put them in the fridge and let the bars set. Then cut into convenient bars to take with you. Store in the refrigerator.
    6. Take them to work or to the gym — a healthy snack.

These gluten-free and sugar-free oat bars are a delicious, healthy snack for on the go. Thanks to the banana and peanut butter they are packed with energy and naturally sweet, without added sugars.
