I've already made healthier takes on Lions, Snickers and Bounty bars before. So these bars, which are a bit like a cross between a Lion and a KitKat, fit nicely into that lineup.

Chocolate Rice Cake Bars

These chocolate rice cake bars are a quick and easy on-the-go snack. Crumble rice cakes and chop the nuts finely. Melt coconut oil and mix with cocoa powder and honey, then stir this into the rice cake and nut mixture. Press the mixture into a baking tin, chill in the fridge for an hour and then cut into bars. Perfect to take with you and delicious as a healthy snack!

Ingredients

  • 2 rice cakes
  • 1 large handful mixed nuts
  • 2 tablespoons coconut oil
  • 2 tablespoons honey
  • 2 tablespoons cocoa powder

How to make rice cake bars with chocolate?

    1. Crumble the rice cakes into small pieces and chop the nuts into pieces as well. Put everything into a mixing bowl.
    2. In a small pan, melt the coconut oil and then stir in the cocoa powder and honey. Add this mixture to the rice cake mixture and fold with a spoon until everything is coated.
    3. Have an ovenschaal or a square baking tin ready, lined with aluminum foil or plastic wrap.
    4. Spread the rice cake mixture into the baking tin (about half full) or muesli mold and press down firmly so the bars won't fall apart later. Cover the dish with foil and place in the fridge for about an hour.
    5. After an hour, cut the chocolate rice cake bars into 5 pieces with a sharp knife. Wrap each piece individually and store them in the refrigerator.
