The star theme also appears a lot in stores, and these Gluten-free and Sugar-free Christmas cookies are super fun to put on the table during the holidays.

Christmas Cookies

Do you have family or friends stopping by at Christmas who can't eat certain things? These Sugar-free and Gluten-free Christmas cookies are a really fun (and tasty) treat!

Ingredients

  • 100 g almond flour
  • 50 g rice flour
  • 100 g Medjoul dates (pitted)
  • 40 g coconut oil
  • 1 teaspoon speculaas spice
  • 1 teaspoon cocoa powder
  • 1 teaspoon vanilla extract
  • 25 g hazelnuts

Christmas Cookies

    1. Preheat the oven to 175°C
    2. Put the almond flour and rice flour in a large bowl. Grind the (pitted) dates in the food processor.
    3. Add the dates to the flour. In a separate small bowl, melt the coconut oil.
    4. Pour the coconut oil over the dates and flour, then add the speculaas spices, cocoa powder and vanilla extract. Mix the dough well until it becomes a uniform mixture; it may be slightly crumbly.
    5. Have a star cookie cutter? Great, use that. If not, cut a star out of paper like I did and use it as a template.
    6. Flatten the dough to about 1 to 2 cm thick, and either press out shapes or place your star paper on the dough and cut around it with a knife.
    7. Place the cookies on a baking sheet lined with parchment paper.
    8. Now pulse the hazelnuts in a food processor and gently press them into the cookies.
    9. Bake the cookies in the oven for 13-14 minutes until crisp.

These Christmas cookies are gluten-free thanks to the almond and rice flour. The dates provide a natural sweetness, so you don't need any extra sugar. Great to make with kids during the holidays!

Store the cookies in a sealed tin in a cool place. That way they will stay fresh for a few days. Want to give them as a gift? Put them in a nice box or bag for a personal Christmas present.
