Granola met speculaas

A staple in my kitchen: a stash of healthy granola. I eat it almost every morning, with some (plant-based) yogurt and fresh fruit. Many granola recipes are quite elaborate, with lots of ingredients, but I wanted to create a basic recipe. Not oat flakes, but plain oats. Cheap and super simple!

Speculaas Granola

Healthy granola with speculaas is a delicious and simple breakfast that's perfect for the colder months. The granola is made from gluten-free oats, nuts, flaxseed, coconut oil, honey and speculaas spices, and is baked in the oven until golden brown. This homemade granola contains less sugar than most store-bought varieties and can be easily stored in an airtight jar for a healthy breakfast or snack.

Ingredients

  • 220 grams oats (gluten-free)
  • 100 grams unsalted nuts (e.g., pecans and walnuts)
  • 30 grams coconut oil
  • 40 grams honey
  • 10 grams speculaas spice
  • 15 grams flaxseed
  • 3 tablespoons water

How to make speculaas granola?

    1. Chop the nuts coarsely and mix with the oats, speculaas spices and flaxseed. Melt the coconut oil and add it, along with the honey and water. Mix everything well.
    2. Line a baking sheet with parchment paper and spread the granola evenly over it.
    3. Bake the granola for about 20 minutes at 150°C. Check whether it’s nicely browned—if not, bake a little longer.
    4. Let cool completely and store in an airtight jar.

This speculaas-spiced granola is delicious for breakfast with yogurt or plant-based milk. The combination of oats, nuts and warm speculaas flavours makes it a real morning treat.

Store the cooled granola in a well-sealed jar and it will stay fresh for at least two weeks. That way you always have a quick and flavourful breakfast on hand.
