Equipment

  • Frying pan
  • Mixing bowl
  • Spatula
  • Grater
  • Toaster or grill pan

Ingredients

  • 4 eggs
  • 2 tbsp heavy cream or whole milk
  • 100 g fresh spinach
  • 60 g feta cheese
  • 1 knob of butter
  • Salt and freshly ground pepper
  • Zest of half a lemon
  • 2 slices sourdough bread (for toasting)

How to make scrambled eggs with spinach and feta?

    1. Whisk the eggs in a bowl with a pinch of salt and a few turns of pepper. Add the cream and stir briefly.
    2. Melt a knob of butter in a frying pan over medium heat. Add the spinach and let it wilt for about a minute. Season with salt and pepper.
    3. Turn the heat down to low and pour the egg mixture over the spinach. Stir gently and regularly with a spatula from the outer edges toward the center. Keep moving so the eggs set slowly.
    4. Take the pan off the heat as soon as the eggs are almost set but still a little moist. They will continue to cook in the warm pan.
    5. Crumble the feta on top and serve immediately on toasted sourdough bread. Grate some lemon zest over it for a fresh touch.

The secret to perfect scrambled eggs is patience and a good pan. Low heat, gentle stirring and taking them off the heat at the right moment. That way you get the creamy, soft texture that makes this breakfast so delicious. Try it with a drizzle of truffle oil if you want to enjoy something extra special.

A high-quality frying pan with a good non-stick surface makes this recipe even easier. You can stir and slide without sticking, which also makes washing up simpler. Choose a pan that distributes heat evenly so you can maintain control over that perfect, creamy result.
