Shakshuka with eggplant and feta is a flavorful one-pan dish of eggs poached in a spicy tomato sauce with peppers, eggplant, and spices. Ingredients

  • 2 red onions
  • 2 garlic cloves
  • 2 red bell peppers
  • 1 eggplant
  • 3 teaspoons ras el hanout
  • 3 cans diced tomatoes
  • 4 eggs
  • 1 bunch coriander
  • 100 g feta

How to make shakshuka with eggplant and feta?

    1. Slice the onions into half rings and sauté them with the garlic in a little oil in a large skillet or tajine
    2. Cut the peppers and eggplant into pieces and briefly fry them
    3. Add the ras el hanout, and optionally a pinch of cayenne pepper
    4. Add the diced tomatoes and stir briefly. (Optionally, you could also add about 200 g of vegetarian meatballs)
    5. Make four wells in the sauce and crack the eggs into them
    6. Crumble the feta and scatter it over the dish
    7. Then put the lid on and let the eggs set for about 15 minutes
