Spelt couscous met gegrilde groenten

When we still lived in Amsterdam and I had no idea why I was so often plagued by stomach aches, I used to make couscous regularly. The traditional kind, that is, with lots of vegetables and feta. After I changed my eating habits it became really hard to find a couscous I could actually eat. I once found gluten-free couscous, but it contained sugar and milk. Too bad. Some time ago I discovered this spelt couscous, which you can simply find at AH among the other spelt and rice products. Of course I had to put a nice recipe online right away, and to keep it healthy you serve this spelt couscous with oven-grilled vegetables.

Spelt couscous with grilled vegetables

Easy to prepare, and because the vegetables are grilled it's also a very healthy meal. Any leftovers make a great lunch the next day. Double the enjoyment.

Ingredients

  • 150 grams couscous
  • 1 eggplant
  • 2 bell peppers
  • 50 grams arugula
  • 80 grams feta
  • olive oil, salt and pepper
  • dried oregano and (fresh) basil
  • optional: 20 (black) olives and 10 sun-dried tomatoes

Spelt couscous with grilled vegetables

    1. Preheat the oven to 200°C – top grill (broil)
    2. Cut the eggplant and bell peppers into large pieces and place them on a baking sheet lined with parchment paper. Drizzle with a little olive oil, season with salt and pepper, and put in the oven on a low rack for 40 minutes (with the top grill on).
    3. Prepare the couscous according to the package instructions. For this spelt variety you add it to boiling water, then remove the pan from the heat, put the lid on and occasionally stir through with a spoon.
    4. Fold the grilled vegetables into the couscous and season with salt, pepper, oregano and basil. You can also add the olives and tomatoes at this point, if you like.
    5. Spoon the couscous onto a plate. Cut the feta into cubes and place it on top of the couscous. Add a generous handful of arugula on the side and your dinner is ready! Enjoy!
