Oesterzwam spiesen in knoflook-sojamarinade

Oyster mushrooms might be one of the most underrated ingredients on the grill. Their natural texture—meaty, fibrous and full of moisture—makes them perfect for absorbing flavors and getting a beautiful char. Paired with a garlic-soy marinade, you get a dish that's rich, savory and surprisingly 'meaty' in feel, without being meat.

Recipe

Oyster Mushroom Skewers in Garlic-Soy Marinade

For those who eat less meat, the meaty texture of oyster mushrooms is ideal. Marinated in olive oil, garlic, soy sauce and honey, then crisp-grilled on a skewer.

Equipment

  • Grill with lid
  • Skewers (wood or metal)
  • Bowl for the marinade
  • Brush
  • Tongs

Ingredients

  • 400–500 g oyster mushrooms
  • 1–2 tbsp olive oil
  • Salt and pepper
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves (finely chopped or grated)
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger (grated)
  • ½ tsp chili flakes (optional)
  • Spring onion (finely sliced)
  • Sesame seeds

Oyster Mushroom Skewers in Garlic-Soy Marinade

Step 1: Prepare the oyster mushrooms

Tear the oyster mushrooms into large pieces, or keep small specimens whole. Avoid very small pieces, as they can dry out on the BBQ. Pat them lightly dry with kitchen paper if needed.

    Step 2: Make the marinade

    Mix in a mengkom:

    • soy sauce
    • sesame oil
    • garlic
    • honey
    • rice vinegar
    • ginger
    • chili flakes (optional)

Stir well until everything is combined.

    Step 3: Marinate

Add the oyster mushrooms to the marinade and mix gently. Let them marinate for 20–30 minutes. You can marinate longer, but oyster mushrooms absorb flavor relatively quickly.

    Step 4: Assemble the skewers

Thread the oyster mushrooms onto the skewers. Make sure they aren’t packed too tightly so heat can reach them evenly. Brush lightly with olive oil if you like and season with a little extra salt and pepper.

    Step 5: Prepare the BBQ

Heat the grill to 200–220°C (direct heat).

    Step 6: Grill

Grill the skewers directly over the flames.

    • Turn regularly
    • Baste occasionally with any remaining marinade

    Grill until they:

    • are lightly caramelized
    • turn golden brown
    • develop a slightly crispy edge

The sugars in the marinade create a nice glaze and light caramelization.

Note: because of the marinade they can burn more quickly. Stay close and turn them in time.

    Step 7: Finishing

Remove the skewers from the grill and let them rest briefly.

    Garnish with:

    • spring onion
    • sesame seeds
    • optionally a squeeze of lime

    Serving

    Serve as:

    • a vegetarian BBQ main
    • a side dish alongside grilled meat or fish
    • part of a shared BBQ platter

    Great with:

    • rice
    • noodles
    • flatbread

Tips for preparing Oyster Mushroom Skewers in Garlic-Soy Marinade

Tear instead of slicing → better texture and marinade absorption
Use medium-high heat → too low won’t give grill character, too high burns
Add the marinade only after grilling for extra glaze (optional)
Pair with a fresh dip (e.g. yogurt-lime) for balance

These oyster mushroom skewers are a delicious vegetarian alternative on the BBQ. The garlic-soy marinade provides a deep, umami-rich flavor with a lightly caramelized crust from the grill. Serve them as a side or as a main with rice or a fresh salad.
