Gezonde pepernoten

This recipe uses spelt flour and almond flour and calls for coconut blossom sugar. That is a type of sugar, but unrefined and much purer than white sugar. Of course you should still enjoy all the treats the Sinterklaas season has to offer, but it can be a bit healthier too! With this recipe this traditional treat is suitable for vegans and people with lactose intolerance.

Healthy pepernoten

What is Sinterklaas without pepernoten? Exactly! But this time we bake them a little differently: healthier and super tasty. Crunchy, spiced and made with pure ingredients you can snack on without guilt. They're perfect to make with the kids, to take as a snack, or simply to enjoy shamelessly during pakjesavond. One handful is never enough… and that's totally fine.

  • Baking tray
  • Baking paper
  • Bowl

Ingredients

  • 150 grams spelt flour
  • 100 grams almond flour
  • 70 grams coconut blossom sugar
  • 5 tsp. speculaas spice mix
  • 7 tbsp. melted coconut oil
  • 2-3 tbsp. plant-based milk
  • Pinch of salt
  • A pinch of ground vanilla

Healthy pepernoten

    1. Preheat the oven to 175 ºC and line the baking tray with baking paper or bakmat.
    2. Mix the spelt flour with the almond flour and add the sugar and speculaas spice mix. Add the coconut oil and vanilla and mix everything well. Now add 3 tbsp. of milk.
    3. Now we’re going to knead the dough! Don’t forget to wash your hands. Try to form a ball of dough: if it doesn’t come together because the dough is too dry, add a little more milk. If you’ve accidentally added too much milk, simply add some more flour.
    4. Make sure you knead the dough well and then shape small balls. Place them on the baking tray and put them in the oven for 15 minutes. After 15 minutes flip one pepernoot: if the bottom is already quite brown they’re done.
    5. If the bottoms are still fairly light and you notice the pepernoten need a bit longer, give them a few more minutes. Be careful though: the bottoms burn quickly.
    6. The pepernoten are ready! You can of course eat them right away, but if you let them cool they become nicely crunchy.
    7. Serve in small bowls to the children.

These healthy pepernoten are perfect for the Sinterklaas celebration or as a healthier snack during the holidays. They’re made with spelt flour and almond flour, which makes them a lot more nutritious than the classic version. The coconut blossom sugar and speculaas spices give them that familiar, spiced flavour everyone loves.
