We recommend storing your knife in a Knife block or hang it from a knife magnet. This extends its life and is safer. Up to 52 HRC
This hardness is too soft to make a quality kitchen knife.
52-54 HRC
This hardness is also still quite soft and offers reasonable quality. This is still optional for a small paring knife, for larger kitchen knives it is not good enough quality.
54-56 HRC
This hardness is often found on French kitchen knives and is certainly hard enough for kitchen use. Knives with this hardness require more maintenance and will need to be sharpened more often with a sharpening steel to keep the knife sharp.
56-58 HRC
This hardness is often found in German kitchen knives. These knives are suitable for many kitchen tasks and can take a lot. They are easy to keep sharp with a sharpening steel.
58-60 HRC
This hardness is mainly found in kitchen knives from Japan. These knives have a thinner blade, which makes them lighter in weight, and they have been shown to stay sharp longer. These types of knives are sharpened at a sharper angle, making self sharpening a lot more difficult.
60-62 HRC
This hardness is also found in Japanese kitchen knives. The rule is: the harder, the longer sharp. It also increases the risk of breakage and makes them difficult to sharpen. This can be prevented by processing the steel in a certain way. The price of these knives is a lot higher.

Can I wash the Diamant Sabatier Riyouri Santokumes in the dishwasher?
High-quality steel knives are best washed by hand. A dishwasher is aggressive: the hot water, steam and harsh detergents attack the blade and can accelerate loss of sharpness. Rinse the knife after use under warm water, dry it immediately with a tea towel and store it in a knife block or on a magnetic strip. This keeps the blade in top condition and lets you enjoy the knife's performance for as long as possible.
How do I keep the knife sharp?
The Riyouri Santokumes is made from high-alloy X45CrMoV15 steel with a hardness of 56–57 HRC, which means it stays sharp much longer than an average kitchen knife. Nevertheless, every knife needs maintenance. Keep it sharp with a whetstone or a ceramic honing steel, which are suitable for thin Japanese-style blades. Do not use a coarse steel or an electric sharpener that removes too much material. Preferably cut on a wooden or plastic cutting board — glass and stone are disastrous for the cutting edge.
Is this Santokumes also suitable for meat and fish, or only for vegetables?
The wide, thin 17 cm blade is versatile. It easily cuts vegetables, herbs, fish and boneless meat. The Santokumes excels at fine cutting that requires precision — think thin slices, julienne or fine chopping. For heavy tasks like chopping through bones or cutting through hard cheese rinds, a sturdier knife is a better choice because the thin blade is not designed for that.
What warranty do I get on this knife?
Diamant Sabatier provides a lifetime manufacturer's warranty on the Riyouri Santokumes. That warranty covers material and manufacturing defects. Normal wear from use — such as the gradual dulling of the blade — is not covered. The knife is made in France, built on more than 100 years of knife-making craftsmanship.
Is the knife comfortable if I use it for a long time?
Yes. The Riyouri handle is designed with an anti-slip texture that provides a stable, ergonomic grip — even when your hands are wet while cooking. That makes the knife comfortable to use during intensive or prolonged cutting tasks, such as cutting a large quantity of vegetables for a stew. Goed kwalitatief mes. Heb altijd al messen van Diamant Sabatier gehad, maar dit is zeker een toevoeging. Het handgreep voelt erg prettig aan met de kuiltjes.
Top set! Voor het geld wat je uitgeeft krijg je het dubbel en dwars terug. 5 hele mooie messen die in het messenblok perfect op mijn aanrecht staan. De messen snijden lekker makkelijk. Mis alleen nog een aanzetstaal van deze serie.

Voor mijzelf een perfect mes door het wat kleinere lemmet. Omdat ik een vrouw ben vind ik dit zelf fijner snijden. De kuiltjes zijn ook erg functioneel doordat de ingrediënten niet blijven kleven.
Omdat ik het vervelend vind om met lange messen te moeten snijden, heb ik dit kartelmes van 13 cm aangeschaft. Het mes snijdt erg fijn en ik hoef geen lang broodmes te gebruiken voor de producten met een harde korst. Aanraden!
