Speltreep met dadels en noten

I've said before that snacks are often the hardest part for people eating sugar-free or wheat-free. At home it's easy to control what you eat and especially what you can eat; outside the home it's much harder. And you can never have enough snack recipes, which is why I decided to recreate Iris's spelt bars. (Note: these bars are wheat-free, NOT gluten-free!)

Spelt bar with dates and nuts

You can never have too many good snack recipes. Try the spelt bars. They're ideal to take with you everywhere.

Ingredients

  • 160 grams Medjoul dates, pitted
  • 4 tablespoons water
  • 1 egg
  • 65 grams whole spelt flour
  • 80 grams spelt flakes
  • 25 grams rolled oats
  • 1/2 teaspoon (cream of tartar) baking powder
  • 100 grams finely chopped nuts (hazelnuts and almonds)

Spelt bar with dates and nuts

    1. Preheat the oven to 190°C
    2. Place the dates and the water in the food processor and blend until smooth. Then add the egg and mix well.
    3. In a separate (large) bowl, mix the dry ingredients: whole spelt flour, spelt flakes, rolled oats, baking powder and nuts. Add the date mixture to this.
    4. Line a small baking tin or baking dish with parchment paper and pour the mixture in. Press it down firmly all over, especially at the edges.
    5. Bake for about 15 minutes until golden brown. Let it cool completely, then cut into bars (8-10 pieces)
    6. Individually wrapped in an airtight tin, the bars will keep for about a week.

The recipe is pretty simple; I just had to pick up some spelt flakes first. After that it's a matter of using the food processor, mixing the ingredients and pressing them well into the tin. I adjusted the recipe slightly because my dates didn't exactly match the weight. I also used a little less nuts and spelt flakes because I found the mixture already quite 'dry' and was afraid that with more dry ingredients the bars wouldn't stick together properly.

The spelt bars only need 15 minutes in the oven, so they're quick to make. I found the bars surprisingly delicious! Although they're completely sugar-free, the dates make them sweet enough and they taste wonderful. They're also great to take in your bag — just wrap them in some aluminum foil and you can take them anywhere. So if you're heading to the beach, pool or amusement park this holiday, be sure to pack a few of these energy bars.
